I went to the Banette bakery in Sault, where I met Nicolas, the baker. During the morning recording session, I listened to him talk about how bread is made and learnt a lot. And when I was editing, I wanted to recreate these conversations, punctuated by the sounds of kneading and bread-making, the fleeting entrances of customers and the electric hum of the shop.
